Perfect healthy lunch for the tuna salad lover

One of my go-to easy lunches that I can always find the ingredients for in my cabinets is a tuna sandwich. It has protein, the salty flavor I love, and is so simple to make. I love to find ways I can incorporate and substitute in greek yogurt – I use it as a sour cream substitute and a mayonnaise substitute. To make the tuna salad healthy, without overloading with mayonnaise, I use plain greek yogurt and flavor it with a little mustard and a sprinkle of salt and pepper. Avocado makes EVERYTHING better, and I’m a huge tomato fiend, so I combined a few of my favorites into this open-faced sandwich and it was so. good. A little balsamic goes a long way, and I usually top my poached eggs with it, so I figured I would give it a try and I’m so glad I did! This has the perfect amount of salty, sweet and creamy to hit every note your taste buds are craving.

Ingredients

1/2 can of tuna

1/2 avocado

1-2 heaping tablespoons plain greek yogurt

1 tsp mustard

1 slice of tomato

1 slice of Ezekiel sprouted wheat bread

Salt & pepper

1 tbsp balsamic vinegar

What to do

Toast the Ezekiel bread

Drain/strain the water out of the tuna can

Mix tuna with greek yogurt, mustard, salt and pepper to taste

Top the bread with tuna, avocado and a slice of tomato

Sprinkle salt and pepper and finish with a drizzle of balsamic
